Mauricio Jiminez

Mauricio Jiminez dreamt from an early age of owning his own coffee farm, but it wasn't until he returned to his home country after emigrating to the United States for some years that he found the ideal plot of land to realize his dream. Roughly 10 years ago Mauricio purchased San Martin, a young coffee farm alongside an avacodo farm that initially sparked his interest, in the Tarrazu sub-region of Leon Cortez. It has been a learning process over the past several years, as Mauricio, apart from a job picking coffee in his youth, did not grow up in a coffee producing family. But hard work and determination have definitely paid off. We're so fortunate to offer his coffee this year. Costa Rica is fast becoming one of our favorite origins from which to source coffee. This yellow honey process coffee is so, so good. It's clean and so sweet, with tons of cooked fruit aromatics.
