To say this year hasn't gone exactly how we've all wanted is an understatement, but that hasn't stopped us from bringing in some of the best tasting coffee we could find. Faver Ninco's lot of exceptional Pink Bourbon arrived just in time to lift our holiday spirits—and boy, does it ever. Faver purchased his farm, Finca Costa Rica, about 25 years ago, but his coffee heritage goes much farther back, as he comes from a traditional coffee growing family in Colombia. Coffee is Faver's sole source of income, which requires the help of his entire family to make sure every step of the process goes according to plan. Pink Bourbon is thought to have occurred from a natural hybridization between Yellow and Orange Bourbon, its fruit ripening to a light pink color and the resulting cup having incredibly silky qualities. Faver's attention to detail throughout every step of the process has made an incredibly dynamic, complex cup of coffee. The cup is bursting with floral qualities, and has a bright, citric acidity, with intense sweetness.
